Pine United Methodist Church is a historically Japanese American, predominantly Asian American, LGBTQIA+ affirming church (a Reconciling Congregation) focused on deepening faith, social justice and community. It is a place of worship whose mission is to facilitate spiritual growth, support spiritual needs, and provide avenues of service so that Christ’s love, compassion and genuine, just peace becomes a concrete, lived reality in our world. They will be serving Wafu Dogs using soy-based balls in a hot dog bun with Japanese-style toppings.
Nichi Bei Café – Mabo Dofu, Inarizushi, Natto
In February of 2022, catering to a community still isolating during the pandemic, the Nichi Bei Foundation and Nichi Bei Weekly launched the “Nichi Bei Café,” a monthly livestream program that serves up a “mixed plate of Japanese American news and culture.” Complementing the community newspaper, Nichi Bei staff and columnists embarked upon shooting and presenting video segments At the Soy and Tofu Festival, the Nichi Bei Café food booth serves up a trio of soy dishes: mabo dofu, inarizushi and natto. Total proceeds from this booth benefits the Nichi Bei Foundation.

For almost twenty years, Hodo has been handcrafting delicious, wholesome, organic plant-based foods for people who love to eat well. The soul of our company lies in the quality of our tofu and yuba, and it starts with the soybean. “Ho” is Cantonese for “Good” and “Do” is Mandarin for “Bean” so it’s a linguistic mash-up for “Good Bean!” We use only the highest quality, 100% organic, North American grown soybeans that are full of protein and good fats.
To make our amazing tofu, we soak these soybeans and grind to a puree to optimum thickness, using a very fine stone grinder. The puree is then simmered and pressed to extract the “bean juice.” This juice, or soy milk, is the base ingredient of all Hodo products. To make the cleanest-tasting tofu, we use a naturally occurring mineral called calcium sulfate to coagulate the soy milk. Hodo meticulously manages its protein salt-to-soymilk concentration to ensure we get the best mouthfeel and taste in our tofu. We then break the coagulated soy milk into curds to release whey and deposit the curds into cheesecloth-lined molds to be hand-wrapped and pressed.
Hodo tofu has, on average, 50 percent more protein than other tofu in the market. This higher protein content yields a tactile tofu that is easy to handle, requires next to no draining, and provides a good mouthfeel, taste and texture. Hodo is the only producer in the country that offers fresh, organic yuba, which is essentially the cream layer of soy milk. To make yuba, we heat our soy milk so that the fats and protein rise to the top and form a paper-thin sheet; this sheet is lifted off the surface of the warm milk by hand. It is a delectable ingredient — sweet, nutty, satisfying, and nutrient-dense.

Mume Farm is family owned and operated since 1983 with a rich history in the macrobiotic health movement. They continue these health practices, cultivating Japanese Ume Stone fruit in Orland, Calif. to craft healthy, artisanal food products, such as umeboshi (a traditional Japanese food condiment). They also bake gluten-free, plant-based desserts. Products grown without chemical fertilizers or pesticides and cultivated with natural farming methods.
Born out of the Northern California Soy and Tofu Festival by designer Ben Kam — who created the festival’s main tofu-oriented graphics — Makimino has become a festival and community favorite. Originally launched with Tofuro and EdaMommy T-shirts, Makimino has branched out into covering most Bay Area sports teams, including Tofu Warriors, Tofu Giants, Tofu Athletics, Tofu Niners and Tofu Raiders.
